My expertise centres around food service, wine, table theatre, and cooking. I teach on our Level 2 in Food and Beverage Service course, and on our Level 3 course in Food and Beverage Service Supervision.  

I owned two businesses in France - a hotel-bar restaurant and a chambres d’hôtes, before moving to the UK and working in restaurant management. I was proud to work as General Manager at the Michelin-starred Simpsons restaurant in Birmingham, and this experience means I have strong local industry links which come in handy when students are looking for part-time work or placements.  

My favourite part of teaching at UCB is our practical work in our on-site restaurant. My students say that my classes are engaging, demanding, and packed with useful information.

My advice to new students is to follow the rules - they’re there for a reason. 

In my spare time, I love rambling, socialising, eating out, and I’ve recently started painting. I’m passionate about arthouse cinema - a recent favourite film of mine is Sentimental Values.
