I’m a bakery and confectionery specialist with over three decades of industry experience. I began my career in a family-run bakery, before opening my first cake decorating business and retail shop. I later expanded this business to include a second shop, employing up to 22 staff over a 32 year period. My bespoke cake business became renowned for our high-quality designs for all occasions - we even made cakes for HRH King Charles and numerous celebrities and featured on television, local news and in national newspapers. In 2020, I sold the business to focus on teaching. 

I’m particularly passionate about cake decoration, and the creative crossover with art and design. What I most enjoy about teaching is helping students bring their ideas to life.  

In my classes, I draw directly on my extensive real-life industry practice - from client consultations and design briefs to insights relating to costing, time management, production workflows and quality control. I aim to create a calm, structured and supportive classroom where students can develop skills steadily, gain confidence, and understand what working to professional standards really means. 

Having run a successful business for a number of years and employed many people, I’m also able to mentor students on employability, teamwork, professionalism, and pathways into self-employment or business ownership.  

I often remind students that the ability to decorate cakes isn’t a “natural talent” but a craft that grows through patience, discipline, and practice. 

My advice to students is to be persistent, stay curious, and view making mistakes as a crucial part of learning.  

Outside of work, I enjoy botanical art, watercolour painting and gardening.
