I attained my Bachelor of Science degree in Food Systems Economics and Management in 1988 from Michigan State University, USA. I then worked for various hotel companies, such as Marriott and Radisson, specialising in food and beverage management, as well as 5 years in the fast-food industry in Orlando, Florida, before relocating to the Birmingham area in 1995, where I worked for the Copthorne Hotel, Birmingham.
Before joining University College Birmingham in 2001, I also worked at General Management level for both a small independent restaurant company, and a large national restaurant chain. I obtained my Postgraduate Certificate of Learning and Teaching in Higher Education in 2004, followed by an MA in Hospitality Management in 2007. I specialise in food and beverage operations at undergraduate and postgraduate levels, as well as tourism studies at postgraduate level.
