With over 30 years of experience teaching Hospitality Management and Culinary Arts Management at UCB, I have specific expertise in operations and quality management in higher education.
My professional experience in industry spans 15 years, including roles in four- and five-star hotels, as well as in airline catering operations across the UK and the Netherlands. The insights I gained throughout my career provide invaluable real-world examples that help bring theoretical concepts to life in the classroom. It also taught me that, in operations, “perfection” doesn’t exist - although we must strive for it, the real work happens in the journey we take to try to achieve it and the lessons we learn along the way.
I take great pride in seeing my students translate what they’ve learned into real success, especially when delivering events. Watching them take the lead, solve problems, and realise their potential is genuinely fulfilling - especially when they started off feeling a little nervous or apprehensive.

My research and published work have primarily focused on internal systems in higher education, particularly the development of assessment processes and quality frameworks, as well as how these adapt to new models of learning such as apprenticeships. In recognition of my contribution to teaching and educational development, I was awarded my professorship two years ago.
Throughout my career, whether managing hotel operations or mentoring students, I’ve valued the diversity of people and perspectives around me. Working with staff and students from different backgrounds, cultures, and nationalities has made every year here truly unique. Even after three decades at UCB, I can honestly say the work has never been boring!
My advice to students is to keep an open mind and engage with people - there’s always something you can learn from them.
Outside of academia, I have a lifelong passion for sailing, which has led me to teach children and adults, participate in racing, and spend time at sea.
Something not many people know about me is that I’m neurodivergent, having been diagnosed with ADHD.
In terms of a quote to live by, I’ve always been inspired by the one alongside UCB’s coat of arms, which states, “we learn to serve”.
