It's a fair crop as students turn over a new leaf

Trainee chefs gained an insight into the world of micro leaves during a visit to Britain’s biggest grower of the speciality crop. 

The Level 3 Chef Catering (Professional Cookery) students visited Westlands in Evesham, Worcestershire as part of their culinary enrichment programme.

Westlands produces micro leaves, speciality cress, edible flowers, watercress and sea vegetables. It also grows a large range of classic and heirloom tomatoes. 

UCB chef lecture Adam Pickett said: “The students were able to have a tour of the vast nursery at Westlands and learn how the growers get their herbs through the seed, growth and packaging stage. 

“Everybody in the group was impressed with the size, scope and productivity of the nursery and gained a great insight into the applications of different crops. 

“Micro leaves have become an important aspect of modern cookery and UCB is keen to ensure that students have a good awareness of the latest trends in addition to a comprehensive knowledge of the classic techniques.”
