Head of Bakery Creates 'Royal' Icing

Dawn Gemmell, Head of Bakery here at University College Birmingham recently contributed to an exhibition called 'Let Them Eat Cake', an exhibition recreating historic Royal Wedding cakes which was then featured in 'The Independent' newspaper.   

Dawn has over twenty five years experience of teaching bakery and confectionery skills. She is a Liveryman of the Worshipful Company of Bakers, has a Masters degree in Hospitality and a BA (Hons) Culinary Arts Management. Dawn is highly respected in the bakery industry and was chosen to help make both the official Queen’s Silver Jubilee cake in 1977 and Prince Charles’s 40th birthday cake.
