MARCHE Chef of the Year

Chef of the Year Mathew with Hilary HallMARCHE; the Midlands Association of Restaurants, Caterers, Hotels and Entertainment recently held their annual Awards of Excellence ceremony at the ICC Birmingham; attended by over 1000 people.

The MARCHE Awards were established in 1997 to encourage training, motivation and team building for Organisations operating within the hospitality and leisure industries, recognising those people who have excelled in the region's Hospitality industry over the last 12 months.

Mathew Shropshall, Chef Lecturer at University College Birmingham, pictured here with Chief Executive of MARCHE, Hilary Hall; was nominated for Chef of the Year. After a paper judging round, 16 of the top chefs in the Midlands attended the cook-off in Januarywherethey were given a selection of ingredients and 2 hours to create athree course menu, the menu created by Mathew was:

  • Sea Bream Nicoise salad
  • Braised Pork Shin, Pomme Puree, Confit of Red Cabbage, Charcutiere Sauce and Glazed Carrot
  • Creme Caramel and spiced fruits

At the awards ceremony Mathew walked away with the title of Chef of the Year 2010.

Also honoured at the ceremony wasThomas Harrison, a second year Diploma in Professional CookeryStudent who competed for the Young Chef of the Year. Thomas competed against professional chefs and was successful in gaining a silver award.
