Former student returns for prestigious event

Sam Greenaway in full competition flowUCB has once again held the semi-final round of the Academy of Culinary Arts, Awards of Excellence, in our competition kitchen. This annual event has been held since 1983 and recognises and rewards the talents and ambitions of young chefs and waiters.

Judging the awards were Andre Garret, Head Chef of 28th Floor at The Hilton on Park Lane, London, Steve Carter, Head Chef of Boodles on Pall Mall, London, joined by Bill Farnsworth, former Director of Catering and Bakery Studies and member of The Academy of Culinary Arts.

Returning to UCB for the first time since he completed his course in 2007 was Trainee Pastry Chef at Opus Restaurant, Sam Greenaway.

Sam came to UCB straight from school in Tipton studying NVQ Levels 1, 2 & 3 in Professional Cookery. Sam’s first placement on his course was at Opus and that soon turned into a part time job, becoming full time when he successfully completed his studies.

The recipients of the awards will be announced in two weeks.
