UCB are Seafood Champions
Great news as UCB Culinary Arts Management students came away with the first prize at the UK Seafood Championship.
First Year students Nicholas Welsh and Audrey L'Utile won their regional final in Norwich, going on to The Grimsby Institute of Further and Higher Education accompanied by Chef Lecturer Paul Russell to compete against 7 other teams in the final.
Nicholas and Audrey came away with trophies, monetary prizes and a coveted one week placement under their belts.
The menu using sustainable fish saw them start with a Escabeche of scallops, chilled beetroot gazpacho and mussel tempura, followed by Spiced coley, yoghurt relish and lettuce jelly and ended with Confit of salmon mi cuit, new potatoes, a pea and quail scotch egg and sauce gribiche.
Paul Russell said "The quality of food produced was extremely high and Nick and Audrey did exceptionally well to come first in a very competitive field."
