Diploma Professional Cookery

Course Content

This three year programme provides an opportunity for students to gain the practical skills and knowledge required to work across a variety of sectors in the catering and food service industries.

For the Diploma, students study:

  • Level 1 Diploma in Introduction to Professional Cookery
  • Level 2 Diploma in Professional Cookery
  • Level 3 Diploma in Advanced Professional Cookery
  • Level 1 Certificate in General Food and Beverage Service

Assessment

Theoretical aspects of the programme will mainly be assessed through assignments and short answer questions. Individual practical tests will take place throughout the programme.

Career Opportunities

There are excellent career opportunities for graduates of this programme in all sectors of the industry including fine dining, hotels, restaurants, gastro pubs, health, welfare and some aspects of leisure and tourism.

Progression to Higher Education

Students successfully completing the full three years of the Diploma, can progress on to the Foundation Degree in Culinary Arts Management at the college, and you will only need to study for a further two years (instead of three) to gain the qualification.  Or alternatively, students can apply for other undergraduate programmes available at UCB.

Year 10 and 11 pupils interested in a career in professional cookery have the chance to take part in a Junior Academy.
